Fermentation technology to produce Serrapeptase

1. PRODUCT 

Serrapeptase (also known as serratiopeptidase), belongs to incision enzyme, is a proteolytic enzyme produced by enterobacterium Serratia. It is white or pale white powder with stench. The optimum pH and temperature are 9.0 and 37-40°C, respectively. The relative molecular mass is 54,00-60,000 Dalton.  

2. PROCESS PARAMATARS

Strain: Serratia marcescens   

Enzyme activity: 10,000-15,000U/mL

Fermentation time: 30hrs

Recovery yield: >80%
